Vegan Enchiladas
Black bean enchiladas
Quick and Easy!
Ingredients:
- 2 cans of black beans
- 1 small red onion ( chopped )
- 1/2 cup cilantro (chopped )
- 3 cups of spinach
- 1 tablespoon cumin
- 10 corn tortillas
- 1/2 cup grape tomatoes
- 1 teaspoon oil
Directions:
Preheat oven to 350F degrees
heat 1 teaspoon of oil in a pan, add the spinach, wait til it's wilted, then add the onions- leaving some to top with, beans, and cumin. Mix together and let it cook for about 5 minutes. Heat up the corn tortillas in another hot pan so they are easy to work with. You'll need a long baking pan for the enchiladas. Fill each enchilada with 1/4 cup of the bean mixture, wrapping each one and placing them in a row in the pan. When they are finished, pour the enchilada sauce over all of the wrapped tortillas. Top with cilantro and red onions. Place in oven for 10-15 minutes. Enjoy with Spanish rice or white rice! Be creative and add other veggies inside too!
